Stock 283 in a 1966 Chevelle. Automatic trans. Originally a 2 barrel carb. Intake replaced with Edelbrock Air Gap dual plane. Everything else stock. Just street car.
The reason for the 4 barrel intake manifold was too install an aftermarket injection system. Owner chose a Professional Products brand.Ran fine for a while and then started to have trouble and no tech backup. Owner just wants it put back to a carb. Really does not want to put the original 2 barrel back on the 4 barrel intake manifold
I have a Holley and Edelbrock carb i can install to get running better, but they may be too big. Rebuilt Holley 670 Street Avenger or New Edelbrock 1906 650 AVS 2.
Would a 500 CFM carb be better? What would be maybe a bolt on carb?

Discuss with the owner his driving habits. If he is someone who’s driving style would rarely get into the secondaries then the 500 would be too big as it would be like driving around with a 750cfm, both having 1.375” venturi and 1.688” throttle. Of the three carbs and driving style what would best suit the cfm used?
Edelbrock would be good with primary sizes and annular boosters.

If you look at factory sbc 283 4bbl setups, for example the carter WCFB, something around 400 cfm should be plenty. The holley 0-8007 should work.Thats what i had on my 283 with a mild cam.

Holley 0-8007 is listed at Jegs for $650 approx. 1.375" venturi and 1.688" throttle bore according to above.
Edelbrock 1403 is listed as 1.190" venturi and primary bore 1.440". About $450 retail. (These don't seem to match.). secondary throttle plate 1.690"
Correct this if any data is wrong.
At least the Edelbrock can have larger metering rods installed without taking carb apart to lean it at part throttle if needed.
What you all think?

That 283 is screaming for a Quadrajet. But you don't have one. One would wonder why he went to EFI in the first place. Easy starting? Fuel milage? Plus, now you have no heat crossover with that manifold.
Solution: You need a 4bl with small primaries and vacuum secondaries or air valve. I personally wouldn't look at anything else but an electric choke quadrajet. Most EFI like carburetor with an excellent choke.
To work with what you have. Right hand drive is correct. Edelbrock 1906 AVS2. Small primaries, annular booster (no heated crossover) adjustable secondary valve, bolt on. But I have to say that I personally have not used this carb

Quadrajet? .
Yes, I have about 50 Q Jet cores. Want some?
If it had a manifold that would direct fit I would be trying one.
I was asked about doing the fuel injection conversion and that brand and I passed. Now i get to undo it and hopefully get the 2 barrel engine to perform well as a purely street ride. Fuel mileage would trump hi performance.
I have a source for Brawlers, but so far they have not been good as far as fuel mileage as a bolt on.
The Edelbrock 1906 I have here could be leaned out on the primary easily if the venturi/throttle plates are not too large. 650 CFM total.
The 670 Street Avenger is going on first just to get an idea.

A 4360 Holley would work but it needs a spreadbore manifold, but you said you didn't have one.

I have removed the Chinese 4 barrel injection system and installed the 670 Holley Avenger. It starts and runs at this point. Have not taken it for a drive yet. The engine was running poorly when it came in with the injection. It still runs poorly. Next is investigating source of that before taking it out on the road. Also the throttle linkage is not correct. Travel in peddle is minimal and does not go to full throttle. Also rod for transmission kick down is not long enough and limits throttle travel too.
Will report back about carb function after tuning it all up. Then decide about a better carb.
