Level the carb

So as it sits on my engine, the carb tilts back a few degrees. I believe I can add a 1/4 shim to the transmission mount.

Other than it makes me feel better, will there be any benefit to this?

Would it be better to level it based on the ride height going down the track?

I would try to avoid messing with driveline angles as it might create issues with u joints. They do make angled carb spacers.
